Center for Food Safety Begins Quarterly Newsletter
The University of Arkansas Center for Food Safety has begun publishing a quarterly newsletter providing information on the unit’s research progress and the professional activities of its personnel. The newsletter is available for download at the center’s Web site at http://uark.edu/ua/cfs/news.htm.
Its posting online is also made known to an extensive e-mail list, which anyone can join by contacting Dave Edmark at dedmark@uark.edu.
The Center for Food Safety is an interdisciplinary unit of the UA Division of Agriculture. The director is Dr. Steven C. Ricke, who also holds the Donald “Buddy” Wray Chair in Food Science.
The Winter 2010 edition covers a study by Center scientists of cost-effective treatments to minimize Listeria contamination of ready-to-eat meats by deli slicers; the establishment by the Arkansas Association for Food Protection (AAFP) of the Michael G. Johnson Endowed Fund in Food Science; the AAFP’s educational conference set for September in Springdale; the publication by the University of Arkansas Press of the Food Safety Consortium’s book of research essays; an e-learning study developed by a faculty team led by Corliss O’Bryan, a Center research associate; and information about the university’s schedule of food safety workshops.
