Egg Nutrition Center Research Director to Present Seminar

Donald Layman, director of research at the Egg Nutrition Center in Park Ridge, Ill., will present “The Evolving Role of Dietary Protein in Adult Health” at 3:30 p.m. Monday, Feb. 25, in Food Science Room D2, Food Science Department, 2650 N. Young Ave.

Layman is visiting the food science department as part of the FDSC Distinguished Seminar Series.  Layman is also professor emeritus at the University of Illinois at Urbana-Champaign after a 33-year career of teaching and research in the department of food science and human nutrition and division of nutritional sciences.

He is recognized for his research on amino acid metabolism, nutrition requirements during exercise, and for his work with higher protein, reduced carbohydrate weight loss diets. Layman currently serves on editorial boards of Nutrition and Metabolism, the Journal of Nutrition Education and Behavior, and Nutrition Research and Practice.

Layman earned his Bachelor of Science and Master of Science degrees in chemistry at Illinois State University and completed his doctorate in human nutrition and biochemistry at the University of Minnesota.
