Healthy Adults Needed for Sorghum Product Nutrition Study

Healthy adults ages 21-45 are needed for a nutrition study examining the effects of sorghum muffins on blood glucose and insulin responses. The study is looking for research participants who are non-smokers and not taking any drugs.

Participation will include a screening process of filling out questionnaires, taking height and weight measurements, and collecting blood samples. If chosen, participants will consume sorghum muffins after a 10 hour fast, have 10 blood samples (finger-stick) taken at intervals over 3 hours, and return one week later to be retested in the same way before and after consuming control (wheat) muffins. The study requires two visits to the Food Science Department at 2650 N. Young Ave., Fayetteville. Compensation will be available upon completion of the study.
