Department of Food Science Needs Participants for Nutrition Study

Participants (parent/guardian and child) are needed for a study examining the effect of dietary supplementation on nutrient status in families receiving SNAP benefits or living in a food insecure environment. $500 compensation is offered.

The Department of Food Science at the University of Arkansas is recruiting families (defined as at least one parent/guardian) with at least one overweight/obese child between the ages of 6-12 years to participate in a nutrition study. Compensation will be provided ($500 cash).  Families will receive all supplies and a monthly grocery stipend. In addition, no family members can have food allergies or food intolerances.

The study involves 6 visits to the University of Arkansas and the Food Science Department over a 12-14 week period and measurements of the following: height, weight, waist-to-hip ratio, blood collection via intravenous puncture; and 24-hour food intake records. The study may also require DXA for body composition for child

Families will be required to complete the study in full in order to receive compensation.
